For some innkeepers, National Pie Day is every day (even though it was actually yesterday!), but can we blame them? Pies are single-handedly one of the most versatile, comforting, and satisfying desserts of all time. This year, ditch the store-bought pies, roll up those sleeves and opt for a simple recipe for Fresh Strawberry Pie courtesy of Snug Hollow Farm Bed and Breakfast in Irvine, KY. It will truly make you wish National Pie Day came more than just once a year.

Ingredients:

Shortcrust:
1 1/4 cups all-purpose flour
1/4 cup salt
7 T butter
Water

Filling:
2 T melted butter
1 T sugar
9-inch shortcrust pie shell, baked
Fresh and whole strawberries, enough to fill the crust

Strawberry Glaze:
1 cup sugar or honey
1 T cornstarch
1 T red wine vinegar
1 T butter
1/2 cup water
2 cups strawberries (measure before crushing)

Directions:
Combine all ingredients in food processor. Pulse and add enough water until it begins to stick together. With floured hands, press into a 9-inch pie pan with removable bottom. Bake at 375 degrees F, approximately 7-10 minutes until lightly browned. While crust is hot from the oven, sprinkle it with melted butter and sugar. Set aside to cool. Crush berries in a food processor. Mix with remaining ingredients. Cook and stir over medium heat until clear, about 5 minutes. Let cool. Fill crust with whole berries and pour glaze over fruit. Chill and serve.
